Typing this from my phone as I walk around inside. I’m walking off my lunch portion of leftover ramen noodles.
This is a dish I’ve likely made 50+ times since discovering it on Pinterest. I was looking for a lazy noodle dish and this is exactly that.
Every time I make it, it’s a crowd pleaser and it also makes great leftovers (clearly). Also people almost always ask for the recipe (especially once I mention how quick and easy…and affordable!) this weeknight noodle dish is.
So here’s a spot for this recipe I have on repeat. One of many but definitely a favorite. Enjoy!
The sauce is three ingredients (all staples in my house and my parents now) and you toss it with browned meat (or no meat!), noodles, and broccoli. I make my sauce first so it can sit a bit before I combine it with the browned meat. One final note on the sauce, it’s really easy to accidentally make this way too spicy. Tread lightly.
The recipe doesn’t call for broccoli but I always add it. It also calls for chopped peanuts but I’ve started just tossing in a scoop of almond or peanut butter to the sauce.
For the broccoli I do mine in the pot the ramen is going to be cooked at. Get the water to a boil, add the broccoli for 2-3 minutes, remove with slotted or spider spoon.
Then keep the water boiling and cook the ramen (usually 3 minutes).
While you’re doing the broccoli and ramen you should be browning the meat (I typically use ground chicken) and then eventually add the sauce (once browned).
Add the broccoli and noodles to the sauce and meat once ready.
Toss. Serve with green onions!
